Today is Friday, the 19th of October. An earlier sunny day has turned into a grey one, threatening some rain in the evening.
Today is Friday, which means, pizza is for dinner.
For the dinner I ended up going to Old School Pizza over in Coburg, directly on Nicholson St. I’ve been passing by it and wondering what it was like. There’s a large neon sign that promises some old style pizza, and you know what, it delivers pretty well on that promise.
The pizzeria is cute and modern with a large accent wall filled with plants and a neon sign declaring “Don’t Grow Up, It’s a Trap”. When I had arrived most of the tables were already reserved for people coming in a large group but was able to squeeze into a table for two before the reservation arrived.
After looking over the vast menu, that also had some rather tasty looking pasta dishes and a few grilled dishes, I ended up ordering three of the Classic Pizzas in a small size. They also had a gourmet range of pizzas that had more varied ingredients but they were only available in large sizes. I didn’t want to order too many large pizzas since I don’t have that much money and it was just me and my partner eating. I ordered the Margherita (tomato, double cheese, and garlic oil, as the base pizza for science), a Funghi (mushrooms, garlic oil, herbs), as well as a Patate (bacon, rosemary, potato). Just FYI, I ended up picking off the bacon since I’m vegetarian, but tasted it anyway!
Let’s go down my highly scientific criteria for the overall pizza tasting.
Tastiness of Sauce
When there was sauce it was pretty darn tasty! I’m not sure if it’s just the type of pizza place it is, but there wasn’t a thin layer of sauce between the base and cheese which made the pizzas just a bit bland. Even with the Margherita pizza it seemed like the sauce was only delegated to the dollops where they were placed. The mushroom and potato pizzas has small dollops of sauce too, but it just kept me wanting just a bit more. So yes, tasty sauce, I just wanted to taste it a bit more!
Yumminess of Cheese
Everyone, this cheese was legit. It was that stretched perfection that came from a very good Mozzarella. When the pizza pulled away from its home base it was stringy heaven. Each bite and pull from the slice was picture perfect cheese stretching goodness. The cheese itself was definitely tasty and just a bit greasy. I just wanted to eat the cheese by itself at times, to be honest.
Crispiness of Crust
The pizzas came right from the oven and on to our table when ready. No waiting for all of them to be ready at once, just one after the other when they were made. Which meant each one was molten and perfectly crispy. It was easy to bite into without much of a fight and the crust was just the right amount of buttery that the flavor stuck to my mouth without being overwhelming. It was a thin crust so if you end up going I hope not to see people leaving their crust behind in an act of defiance. Overall a very good crispy crust.
Because if all tasted so fresh, the blend of cheese and dough, it made the mouth feel pretty superb. There weren’t too many ingredients on the pizza, so I didn’t feel like I was fumbling too much with what was on top, and the oil both on the cheese and on the dough made my mouth very happy.
This one is a bit tough since I ended up getting the small pizzas. They were a great size to eat pretty fast before the whole pizza pie got cold, but that meant that folding wasn’t really needed. They were nice small slices that kept the ingredients together with no sagging dough happening. Which is good! But it does mean that there is no test of Foldability that I can talk about.
Overall, a very good experience! Yes, I ended up getting small pizzas, but with the 3 pizzas ordered I ended up basically eating one small pizza to myself with enough to take home for morning pizza or lunch, and to share with my housemates. (Maybe, we’ll see how hungry I am then.) I would recommend it if you’re looking for some nice crispy pizza with a bit of variety. It does say that the pizzas can be made vegan, though I did find their small size of a vegetarian menu a bit disappointing. Perhaps they’ll be able to do substitutions if there’s a reasonable topping mix you’d like. So although I won’t be really giving this a solid number I would say that if you’re in Coburg, give Old School Pizza a try and that I’m excited about a future review to order it via delivery and base it on how well it keeps its shape.

It was a decision that made the end of the week something to look forward to and the stress of what was for dinner would be taken away. We even ordered enough to have lunch for Saturday! So much decision stress taken away!
I know you're asking, what does this person know about pizza? What qualifies her to write a blog and review pizza places in Melbourne, Australia? The answers are simple.
Now that that's out of the way let's continue to the all important criteria I will be basing my amateur food opinions on.
